感想:<br />
適合有持續在爬山的朋友。<br />
<br />
提醒:<br />
1. 如果有小孩,不方便走這麼遠,可以將車停在仁淵茶葉附近再散步上去,如果平常沒有在運動或爬山的朋友要走約50~60分鐘,因為是陡上坡ㄡ。<br />
<br />
2. 如果要看忘憂森林的大蝌蚪,現在去可能很少或沒有,九月份的時候很多,其他季節就不清楚喽。<br />
<br />
3. 不管從哪邊上山,建議都要帶把登山杖或長雨傘輔助,比較省力。<br />

</div>天天都快樂http://www.blogger.com/profile/03226065857154203219noreply@blogger.com0tag:blogger.com,1999:blog-2652102221936065006.post-28040588642176380642010-10-08T20:35:00.000+08:002010-10-08T20:35:47.716+08:00烤麵包最近各店家都在狂歡週年慶,這家3000抵300, 那家5000抵500的,看了當然不只心動,還馬上行動,真是那個也想買、這個也想買,所以,就通通帶回家喽。血拼的戰利品中,有一個號稱可以煎、煮、炒、炸、烤的平底鍋。看到可以"烤",這個字還真是熔化我的心,想想,一直很想買的烤箱還沒買,可是卻很想大展身手烤麵包,正苦無發揮之處,這個平底鍋剛好可以滿足各種烹飪需求又可以烤麵包、烤餅做水煎包的,於是,它就理所當然的出現在我們家。<br />

準備高筋麵粉糰(早就揉好發好的),左邊加一些酵母發粉,右邊加一些中筋麵粉,再和一些鹽,揉合後分割滾圓,進鍋用小火烤。期...待...中...<br />

十分鐘後......<br />

怎麼有燒焦味,我用小火烤哩,哇,趕緊翻面,繼續烤,焦的,就先焦了吧!<br />

再過五分鐘後.......<br />
<br />
可以吃喽,可是呢?看起來不太可口,吃起來也不太可口,又想想,不能浪費食物,就吃吧,土土土麵包配上花生醬吃,還是啃完了呦。<br />

心得:<br />
可能電影看多了,想學帶高帽的大廚展現過人的廚藝,所以憑感覺的,那個材料也加"一些",這個材料也加"一些",完全沒照麵包班老師說的要按比例調材料,也沒足夠的時間讓麵糰發酵,結果,當然是很糟啦。下次改進喽!明天會更好歐~~~<br />

在社區型大樓,戶數多是常態、鄰居間不打招呼也是常態,可是呢?明明都要搭電梯上樓,卻不願同搭一部電梯,寧願等另一部電梯,讓我感到困惑奇怪,這是哪們子的習慣!!<br />

整體評價:<br />
油醋醬:好吃耶,就像上面說的,淡淡的香氣加上淡淡的甜味,更能襯出食材的味道,適合提味。<br />
當健康醋直接吃也適合;加在蜂蜜裏當蜂蜜醋喝也很好喝。:)<br />

飯後,上網搜尋一下有沒有相關食譜,找到"芹菜葉煎餅"的作法(感謝這位網友提供<a href="http://blog.yam.com/s182162/article/12974142">http://blog.yam.com/s182162/article/12974142</a>),晚上就趕緊試做看看喽。小玉我有小修改內容,食譜如下:<br />

芹菜葉:2/3把(另外1/3配冬粉吃掉了)<br />
麵粉:我用的是高筋麵粉約300g (家裡有什麼就用什麼,可是還是不夠,如果麵粉多一點,在煎的時候受熱會比較平均,也比較好煎)<br />
鹽:海鹽約2/3圓鐵湯匙<br />
糖:冰糖約2/3圓鐵湯匙<br />
蛋:1顆<br />
白胡椒粉:些許<br />
其他:黑麻油些許、香油些許(這是我加的)<br />

將以上材料加冷水均勻攪和成泥狀後稍微放5分鐘 (讓麵粉醒一下),即可下鍋,用油小火慢煎,約5~10分鐘即完成下面這個可口的芹菜煎餅。<br />

還是喜歡沾醬油吃,比較香(這是2/3份的材料煎的)<br />

賣相:技術還不是很好,所以煎的不是很美。看起來有點像九層塔蛋~~~~~<br />

口感:吃起來有芹菜香但沒有苦味,加上用的是高筋麵粉,所以吃起來 Q Q 的,還不錯!<br />

晚餐只用了1/3的量,全部煎掉對我們來說太多,因為還有其他的菜,所以把剩下的材料冰起來當今天午餐。<br />

不知道大家有沒有讀過這本書,剛看到是被書名吸引,"巴黎"藍帶廚藝學校日記,看到"巴黎",就把書打開翻翻內容,覺得寫得還滿好笑的,就買下來啦。<br />

作者寫道:"學完整套完整課程需要2萬歐元",所以要去藍帶學院上課,口袋也要夠深;<br />
而且授課的大師們不見得能聽或說英文,所以懂一些法文也是必須的(聽不懂的好處就是就算被罵得狗血淋頭也不知道,這樣自尊心比較不會受挫); 還有被老師羞辱,不能生氣,也不要哭泣,因為會有皺紋(這句是我補的)。作者還寫出一個做菜的重點,也是我現在做菜時會謹記在心的,就是要試吃、試吃、試吃.....<br />

</div>書中讓我印象最深的就是"庖丁解兔"篇,要把兔子頭剁了再來料理。這樣,怎麼還吃得下勒,想到兔子瞪大的眼睛,應該就沒胃口了吧!<br />

這本書寫出作者在藍帶學院及巴黎的生活點滴,看起書來很輕鬆,沒有壓力,而且很快就可以看完,書中還有附幾篇食譜,有興趣的話可以嘗試看看。<br />

06/10這週做的火腿切達吐司及牛角麵包<br />
<br />
從學麵包開始到現在已經能掌握製作的基本功,但是製作麵包的基本設備也是要準備的。<br />
<br />
- 攪拌機:而且是要放在地上那種大型的,據老師說這種才能真正把原料均勻攪拌。優點是很方便,不用自己揉半天,只要把原料按程序放進攪拌機攪拌即可。缺點是因為很大台,需要佔一點空間,透天厝才適合,因為攪拌過程中會有大聲震動,如果住華廈或公寓,會被鄰居抗議的。<br />
<br />
- 烤箱:老師也是建議要訂製的大型電烤箱(長一百多公分那種),但是也需要大空間。除非住透天厝而且還不能常常在搬家,不然來一個這麼大的烤箱也是挺麻煩的。<br />
<br />
- 發酵箱:顧名思義就是專門發酵麵糰用的,這也是和烤箱一樣大,也是需要大空間毆。<br />
<br />
- 小型設備:例如吐司模、烤盤、小型打蛋器、刮刀、秤重機及過篩器等,添置這些都是必備的。<br />
<br />
所以呢,若真要工欲善其事必先利其器的話,以上所述的設備是必須的,只是設備大小就看個人需求和實際而訂,添購這些設備也是一大筆花費呢。<br />

原來湯種土司,是需要在製作前一天先將湯種部分作好,製作當天將前ㄧ天作好的湯種混合現做的其他原料,成品如上,就是好吃的湯種土司。<br />

至於甜麵包,其實基本工都ㄧ樣,就是餡料不同,還有包餡手法的技巧及方式,這得要親自在現場看才能體會啦! <br />

是的,它還在,我並沒有拋棄它,本著物必盡其用的想法,開始製作廚房職業生涯第一個蔥油餅。上網先參考阿嬌主持的食全食美節目,由李梅仙老師示範的蔥油餅製作法後,很快的做出三個可愛又可口的餅。但因個人口味喜好,我稍微改變一下李老師的調味方法,李老師是在製餅過程中即先加鹽調味;小妹我偏愛醬油,所以製作過程中完全沒有加鹽,而是做好之後沾醬油吃。<br />

看看,這蔥油餅是不是挺吸引人的呢!咬一口,蔥香、餅香、醬油香,香味不絕啊;加上,外餅脆,內餅Q,口口皆是美味,配一杯台灣高山烏龍茶,真是剛剛好。<br />

<b>餃子皮:</b>剛開始自己在猛搓亂揉,老公見狀,馬上走過來說,我做給你看,看他壓著揉著,嘿嘿,麵糰變得光滑亮面的,果然不ㄧ樣,打從心底崇拜他;接著只要再發麵團約30分鐘,即可桿皮包餡。<br />

<b>左邊</b>麵糰:兩天前我桿的麵糰,還是可以包餡,可是比較乾,發好的麵糰中間還看得到縫隙,而且因為皮太硬,在煮的過程中容易破而滲水進去,好幾個都變湯餃說,口感上也沒有很好,因為皮太薄,看起來反而比較像餛飩皮......<br />

<b>右邊</b>麵糰:老公桿的,果然是光滑柔軟,包起餃子還真有個樣哩!而且好好吃歐~~~~~ <br />

<b>餃子餡:</b>我做的是韭菜豬肉餡,順序呢!<br />
韭菜切碎→ 蔥切碎→薑切成薑末→加入調味料(現炒的花椒油、香油、些許黑胡椒、些許鹽及些許米酒)→然後試味道,太鹹或太淡這時可以做調整,如果先加生肉就不能試→加入剁碎的豬胛肉絲→均勻攪拌→放著入味約10分鐘→包入餃子皮中→下鍋→熱騰騰的餃子上桌喽!(見圖)<br />

看起來是不是很可口呢!!皮厚薄剛剛好,咬起來又Q又有彈性,人間美味 :-))<br />

起個大早,懷著喜悅的心情前往機場,我們搭乘早上9:20am的國泰航空經香港轉機飛往布里斯本,在香港機場時,因為還有點時間,所以我就到處閑晃了一會,逛逛免稅商店,早上的香港機場人聲鼎沸的,好不熱鬧。不過,小玉我這次觀察到一個現象,那就是在香港機場轉機的印度人變多了,處處可以看到印度男人、女人及小孩的身影,可見印度的經濟開始成長喽。<br />

所以,往布里斯本的班機上當然也有一些約莫10個印度人同行。不過他們的行為讓我歎為觀止,比較特別的就是在快到布里斯本前有供餐,他們竟然不以為意的拿出MP3 player大聲放印度音樂給艙內的人聽,而且就在我們位子右後一排。也許他們在他們的國家就是這樣,說不定他們也覺得我們很奇怪,放個音樂有什麼了不起,還要求他們把音樂關掉,文化差異真是大不同阿!不過,我們也只是希望他們尊重我們,因為他們在享受震耳欲聾音樂的同時,我們也正在享受機上電影喽。<br />

晚上十一點多抵達布里斯本機場,說真的,隨著年紀的增加,坐經濟艙的位置也越感疲累,雖然星期六晚上的布里斯本夜生活很熱鬧,但只想趕快到飯店洗澡睡覺,好像真的老了O_O<br />

03/22下午呢,我們搭計程車到Brisbane Summit俯瞰整個Brisbane的景色,Summit離市區計程車約25分鐘車程,也有公車,去程只到下午三點多,確實時間忘記了。<br />

03/23: 搭車到South Brisbane走走,下車後先到博物館走走,再散步到這間Piaf吃午餐,這也是網路上評價不錯的法式料理餐廳,我點的羊膝。羊膝全沒有一點羊騷味,吃起來很甜、很嫩,加上醬汁及配菜,真是好吃得讓人想再吃ㄧ盤,咬下一口,真是滿滿的滿足,會不經發出ㄇㄣˊˊˊˊˊ好吃的讚美聲~~~~<br />

以上,是在Brisbane的行程,03/24ㄧ早即搭澳洲內陸班機從Brisbane飛往澳洲最南端的Tasmania,飛機時程約3小時。<br />

PS. 小插曲,03/23晚上在飯店很興奮,因為即將要飛往Tasmania玩,另一個原因呢?是因為先前老公找到ㄧ間在全球赫赫有名的餐廳,名叫Fee & Me,評價可是五顆星的,所以呢!想說先上網瞧瞧順便先訂位,以免向隅。結果,到Fee & Me的官方網站ㄧ瞧,蝦米,目前歇業中~~~~,我們兩對看一眼,怎麼會這樣,出發前還有營業啊,千里迢迢也是為了一嚐美食,可是,真的是歇業,想說只好到當地再問問當地人啦。隔天到Launceston機場租車,問租車公司的人才知道原來經營的夫妻要退休,所以餐廳歇業,不知是否有將餐廳轉讓給其他人業主,租車公司的人也不清楚,真是好可惜啊,有點遺憾! <br />

03/24: 抵達Launceston後,領了租的小車到市區找在網路上網友評價四顆星半、五顆星的法式麵包餐廳tant pour tant,這間小店強調只用Tasmania島上的原料做餐點、麵包或蛋糕,小小的店面,店內約四到五坪大,擺了四張小桌即顯得有點擁擠,牆上還掛著對這間店的一些報導及照片,簡單倒也雅致,這間店可是深受當地人歡迎,店內電話響不停,兩個女服務生忙進忙出的招呼絡繹不絕的客人,店門外的紅磚道上還擺放幾張桌椅,相較於店內的忙碌,坐在門外卻是多了幾分悠閒。<br />

逛了酒莊後,下一個行程是去Cataract Gorge,市區開車車程約五分鐘就到。這個天然的環境是當地居民很常去跑步運動或休閒的地方。<br />

這是坐在Cataract Gorge Basin Chairlift上拍的照片。Chairlift是什麼呢?有划過雪的朋友一定知道,就是兩張椅子,只有鐵架攔住腰,雙腳騰空的椅子,上面靠ㄧ條很粗的纜線支撐住重量,不過,滑雪場的chairlift下面是雪; Cataract Gorge chairlift 下面是水,離水面約20公尺高 (自己估的),所以,坐起來有點恐怖,不太有安全感,但,風景的確還滿不錯!<br />

03/26: 原本希望天氣和昨天ㄧ樣,我們可以爬在Dove Lake 區域的另ㄧ個Trail,但是ㄧ早雲層很厚,又飄著綿綿細雨,所以改變行程,去看Devil。<br />

Tasmania島上有種動物叫Tasmania Devil,現在是列入保護動物之列,我們來到Tasmania當然不能錯過去看看Devil喽!據保育中心保育員所說:Devil在3000年前的澳洲可是旺族,數量相當多,當時的澳洲本島還跟塔斯馬尼亞島相連,後來,Devil在本土消失,只有在Tasmania島上可見。近年,數量大幅減少,原因其一為當地人射殺,其二為Devil之間有一種絕症(皮膚病),在Devil之間互相傳染(Devil 兄弟姐妹在成長的過程中會互相用嘴咬來咬去,這是他們學習的一種方式,但也因此將病毒傳染給對方),所以也是Devil快速減少的原因。<br />

從Cradle Mountain Lodge開車五分鐘可到Devil的保育中心,保育員手上抱的就是ㄧ隻Baby Devil,但是因為天氣很冷很冷,那天大概只有五度,又下雨,園內的Devil都懶洋洋的躲在保育中心為他們搭的小屋中睡覺,所以真正看到的只有圖中這一隻。<br />

03/27: 因為班機的關係,我們也是ㄧ早就搭機從Launceston機場返回Bristane,接國際班機回台灣喽。<br />

<b>感想:</b><br />
<b>食:</b>我們去澳洲的時間點正是台幣貶值時,台幣:澳幣=1: 29.5左右,澳洲本身國內物價也高,Brisbane尤其是貴,一個人ㄧ餐約要八、九百台幣,一餐(兩份主餐+兩杯飲料)兩人55元澳幣算是便宜的,當地消費的確偏高,除了澳洲產的酒之外,澳洲生產的紅酒白酒的確比國內買便宜一些。<br />
<br />
<b>衣:</b>本來03/27當天主要行程是逛Brisbane機場附近的Outlet,希望能買到便宜又物超所值的好東西,但是其實單價並不便宜,只是相對Brisbane物價較便宜,還是買不下手,乾脆去逛超市,買些好吃的水果、優葛吃。<br />
<br />
<b>住:</b>見仁見智,小玉我覺得一晚約莫Aut$120可住到覺得還算舒適乾淨的房間,這是可接受的價格。<br />
<br />
<b>行:</b><br />
Brisbane: 大眾運輸很方便,包括:公車、計程車及聯外的火車。<br />
Tasmania: 建議租車,玩的路線比較有彈性。<br />

圖中的吐司和麵包就是我們的成果,口感和塔斯馬尼亞島上那間麵包店不太ㄧ樣,我們做的是台式軟麵包,還真是很好吃,光把食物放著,遠遠就可以聞到香味,吃了麵包班做出來的麵包後,就吃不太下外面賣的麵包啦。<br />

因為小玉我幾乎每天都泡高山烏龍茶喝,所以我選擇再利用剩下的茶葉渣除臭。每天將不再回沖的茶葉倒出攤平(如照片所示),放到可直曬太陽的地方曬約3-4個小時,收起來的茶葉渣就成了好用的除臭劑。<br />

早上約10點左右到,天氣陰陰的,飄著毛毛雨。路況很好走,穿插柏油路、石頭路及木頭路。<br />
